| Garlic is a very Healthy,
Tastey and Fun Food . |
Garlic is a really good
source of selenium, an
antioxidant that certain researchers consider
helpful to cancer patients. Researchers have
also found fresh garlic juice (the oily part)
has an active ingredient (Allistatin) that
inhibits the growth of several bacteria and
fungus.
Garlic (Allium sativumis) a member of the the
onion
family, Alliaceae.
It has been a long held belief that garlic is
also good for your heart, blood and can help you
sleep. Eating eleven to twelve cloves of garlic
per
day can also lower your cholesterol. There are
only
about four calories for one clove. Garlic has at
least three varieties. Spanish garlic is small
with
a purplish color. Italian garlic is bigger,
whiter
and has a milder flavor, while Tahitian garlic
(elephant garlic) is still larger, but similar to
Italian in mildness. Tahition garlic will have a
slight sponginess, which may not be noticed when
stewed, or diced and sauteed.
Brushing your teeth and tongue with tooth paste
can
eliminate the garlic-breath, but so can eating a
lemon.
Brushing your fingers with a lemon-wedge can also
alleviate or remove the smell and break down the
oily
active ingredient. Martha Stewart has advised
rubbing
your fingers on stainless steel to remove the
odor,
but it's unclear if the stainless steel method
works
for everyone.
When cooking with garlic, be careful not to burn
it. That gives it a bitter flavor, while roasting
it
brings out a nutty flavor. Saute garlic in olive
oil,
with or without added butter to enhance the
flavor.
You can also add that to a stew, soup or stoup
for
further cooking to mellow out the flavor.
Some people like the strong flavor and health
benefits
of eating several raw and peeled garlic cloves
per day.
If you don't like a strong garlic flavor, or if
it makes
your mouth, stomach or esophagus burn, you can
simply peel
a clove and rub it on toast, before buttering it
for garlic
toast or the inside of a bowl, if it's for a
salad or soup.
There are numerous annual garlic-festivals held
throughout
cities of the united States. The Gilroy Garlic
Festival in
Gilroy, California, around July 24th, 25th and
26th where
they have served everything from garlic pudding
to the more
recent Garlic Butter Cookie. There is also the
Hudson Valley
Garlic Festival September 26th and 27th held in
Saugerties,
New York. Their selections include the following
(short list)
of foods. Garlic chicken, garlic fritters
(kachori), garlic
ice cream, garlic knots, garlic mozzarella,
garlic mushrooms,
garlic onions, garlic pasta, garlic pork, roasted
pork on a
spit, garlic pretzels, garlic sauerkraut, garlic
soup, garlic
steak, garlic steak sandwiches, garlic turkey
with mayo.
There is also the North Plains Garlic Festival,
held in August
in North Plains, Oregon and the Pocono Garlic
Festival held
in Shawnee, Pennsylvania and "The Garlic
Fest and Craft Show"
held also in August at the Southwest Washington
Fairgrounds
of Chehalis, Washington, just to name a few...
Garlic will remain good for some time if it's
stored
in a cool, dry place. Do not store it in a wet
place like
the refrigerator or if it is bruised. It should
then be
eaten immediately and replaced. It's always nice
and
healthy to keep a small supply of fresh bulbs of
garlic
on hand, but if the flavor is all you want,
powdered-garlic
is also nice and has a shelf life of 18 months to
three
years if stored in a cool, dry, air-tight place
away from
direct sunlight, or darkness.
